Atelier de fumage artisanal dans le Luberon, la Saumoneraie respecte la grande tradition du saumon fumé depuis 1998. Chaque saumon est traité individuellement, sélectionné frais, salé à sec au sel de Guérande  « nature & progrès », et délicatement fumé à froid au bois de hêtre, sans additif ni conservateur. Le résultat est un grand saumon, au goût inimitable. L'établissement propose également une gamme de saumons fumés et marinés : pastis fenouil, bourbon poivre, vodka aneth ; ainsi qu'un éventail de produits d'épicerie fine de qualité : soupe de poisson de roche, brandade, caviar français, vins...

Les friandises de la plus ancienne fabrique de calissons d’Aix. L’épicerie Brémond fut fondée en 1830 sur le cours Mirabeau, avant de déménager en 1986 rue d’Italie où la boutique dédiée au sucré se trouve toujours. La gamme de confiseries – calissons, nougats, fruits confits, croquants et autres délices du Midi – est aujourd’hui réunie sous la marque historique « Brémond Fils », qui chapeautait déjà les douceurs de l’institution à ses débuts. Une seconde boutique aixoise, rue Bédarrides, accueille un atelier de confection de biscuits et toute la gamme salée.

Voir une fabrication artisanale de calissons derrière les grandes verrières des Halles 1889. Leur nom ramène à la date de la fondation de la confiserie d’Entrecasteaux, l’une des plus anciennes calissonneries de la région ! Quatre générations s'y sont succédé avant que la maison ne soit reprise par la famille Evans en 2015. La fabrique est aujourd’hui installée à Éguilles, au cœur des Halles 1889, un espace de 900 m2 tout en transparence où se côtoient comptoirs de restauration et commerces de bouche.

Cette boutique est devenue en quelques années LA référence d'Aix-en-Provence dans sa catégorie  ! Le bio à 360 degrés. En 2020, Olivier Nasles a lancé un pôle dédié aux produits bio et locaux au sein du domaine familial de Camaïssette. Son objectif : créer un lieu de vie où cohabitent une épicerie et un espace de détente. Aux côtés des vins et des huiles d'olive du domaine, on trouve un large panel de charcuteries, fromages, légumes, épices, thés, tisanes ou bières artisanales, tous issus de l'agriculture biologique provençale.

The taste of sweet Provence. In 1920, Ernest Guillet created La Nougaterie du Roy René in Aix, a small confectionery workshop in the purest local tradition. Extra virgin olive oil comes from 10 ha of olive trees of the Aglandau variety, planted to support the olive heritage of the village damaged by the great frost of 1956. Calissons have a remarkable taste and finesse. Founded in 1874 by a Swiss confectioner, Maison Parli, a venerable institution in Aix, celebrates its 151st anniversary^E year in 2025. Her secret? Full control of the calissons manufacturing cycle, which begins with the confection of the fruits, on site, using ancestral methods. The dough, rich in almonds and sweetened with fruit syrup, is ground with ancient granite rolls that preserve the texture of the ingredients. In 2022, 3,000 almond trees were planted on 10 ha cultivated organically in Ventabren, reflecting the company's desire for permanent improvement.

The right bottles at all prices. In the heart of the old town, Vincent and Livio share their favorites for both French and foreign gems, with particular attention paid to organic, biodynamic and natural wines. The land steeped in history. At the XIII^E In the 19th century, Montaurone Castle was part of a Templar commandery. Forest of oaks, poplars, elms, springs and meadows cover this beautiful family estate established on a limestone plateau at an altitude of 200 m, crossed by the Touloubre river. The vineyard, certified organic since 2016, extends over 91 ha belonging to the Decamps family, owner-harvester for over 40 years. The estate also has 2,200 olive trees on 8 ha, also grown organically.

Ces derniers sont engagés dans des démarches particulièrement respectueuses de l'environnement, ce qui leur a valu la certification « Haute Valeur Environnementale » de niveau 3 pour tous leurs produits. Les cuvées phares pour la partie domaine sont Clos Victoire et Rocher Rouge. Côté oliveraie vous y découvrirez quatre sélections d’huiles d’olive aux saveurs uniques.
