A spearhead of Aix's culinary heritage

We're going for 🚶

Calissons have a remarkable taste and finesse. Founded in 1874 by a Swiss confectioner, Maison Parli, an institution based in Aix, is celebrating its 150th anniversary this year. Her secret? Full control of the calissons manufacturing cycle, which begins with the confection of the fruits, on site, using ancestral methods. The dough, rich in almonds and sweetened with fruit syrup, is ground with ancient granite rolls that preserve the texture of the ingredients. In 2022, 3000 almond trees were planted on 10 ha cultivated organically in Ventabren, reflecting the vitality of this venerable company.
